Our Story

We draw inspiration for our spirits from this special marine environment, the unspoilt Atlantic coastline of County Cork.

Born of heritage barley.

Clonakilty Distillery founders the Scully family have farmed this coastal land for nine successive generations and over 320 years.

“Our hearts feed our passion, that entrepreneurial spirit to innovate and create, born of a deep understanding of our natural surroundings”.  


We grow our own barley on our family farm in the shadow of the Galley Head lighthouse.  Centuries of sea mist, soft rain and ocean spray provide a complexity to the soil that permeates through to each individual grain.


We source our water from a single well on our family farm. Remote and unspoilt, it is drawn from deep within the ancient rock formations, naturally filtered through multiple layers of sandstone and baryte, one of the hardest rocks known to mankind.

Located at the waterfront in the town of Clonakilty, our distillery has been designed with care and passion to make the very best Single Pot Still Irish whiskey. As well as offering distillery tours, you can visit our Minke Gin School, distillery shop and our award winning Whale’s Tail Restaurant. Private Venue Hire available.


Perched 200 metres above the ocean, our Atlantic Ocean warehouse is ideal for maturing the finest of whiskies. Pure clean air, transported across thousands of miles of the Atlantic, provides a freshness unspoilt by human intervention. It is ever-changing – from wild Atlantic storms, to tranquil sea mist and soft rain. In this micro-climate, a whiskey will only rest for a short while before interacting with the wood and the angels to develop a unique and distinct maritime character.
